Crispy Battered Chicken


The crispy battered chicken is delicious.

Here are the ingredients for the batter:

1/3 cup of flour
1/3 cup of pancake mix
1/3 cup of water

sprinkle pepper
sprinkle salt
sprinkle of garlic powder
sprinkle of onion powder
4 tablespoons ketchup

Dredge your chicken in flour
Mix the pancake mix with the other ingredients and cover the chicken. Drop into a heated skillet filled with oil or use a deep fryer. Fry until dark golden brown.





Cheesy Pasta Shell Bake



Boil your pasta and drain,
Grease a baking dish and pour the pasta in.
Add your chopped red onion.
Add your sliced mushroom.
Add your cubes of cheddar and mozzarella cheese.
Sprinkle a mixture of breadcrumbs and Mozzarella cheese on top and bake for 25 minutes on 350.

FETTUCCINE WITH MUSHROOM AND ONION SAUCE




This is a vegetarian 20 minute meal if you decide to omit the Parmesan cheese. It is your choice. All you need to do is simmer the mushroom and the red onion together. Add a little water, sun-dried tomato sauce, pepper, garlic paste and finish simmering while you pop the fettuccine into a boiling pot of water. 4 minutes my friends for the fettuccine to boil and take it out, drain and toss into your simmering mushrooms and onion sauce. Serve with crusty garlic bread and watch your family smile. 

Saucy Red Onion Chicken Strips





Grilled chicken strips, red onion and chives are tossed into a homemade sauce of 1/2 cup of ketchup, 1 cup of water, 1/3 cup of brown sugar, 3 tablespoons flour, 2 tablespoons of vinegar and 2 tablespoons of garlic paste. I allowed it all to simmer for 20 minutes while I made the brown rice and the fries. A perfect meal in 20 minutes because I have other things to do, right?

Sun-dried Tomato, Mushroom and Onion Ranchero Pasta Shells





Sun-dried tomato, mushroom, onion ranchero pasta shells is the perfect meal for us. It takes 20 minutes to make and it is vegetarian. I’ve been trying to include more vegetarian meals these days.
Ingredients
sun-dried tomatoes
10 mushrooms
1 red onion chopped
pasta shells
Sauce
1 tablespoon salt
1 tablespoon pepper
1 tablespoon garlic
1 tablespoon onion powder
1 tablespoon chives
1 tablespoon paprika
1 tablespoon of mustard seeds
1/3 cup extra virgin olive oil
Directions
In a skillet, fry your sun-dried tomatoes, onion and mushrooms together.
Boil your pasta as you normally would.
Mix all the ingredients of the sauce together.
Once you drain your pasta shells, you can add them to your skillet.
Pour your sauce over the pasta and mix together.
Serve with crusty garlic bread.

Sun-dried tomato fajita chips with bacon, hash browns, peppers and cheese






These chips were made by using sun-dried tomato fajitas cut into wedges. I added chunks of pizza cheese, hash brown, crumbled bacon, peppers and Mozzarella cheese. I sprinkled green onion on top and baked it for about 25 minutes. It made the perfect lunch time snack. 

Pasta Bake




This pasta bake was made with colored cheese tortellini. I added a Mozzarella cheese sauce with cracked black pepper, onion and garlic powder, and covered it with bread crumbs and more Mozzarella cheese and chives. You'll only need about 20 minutes for this to cook and you can serve it as a side or as the whole meal if you feel like it.
