MUDDY ROAD CHEESECAKE




Shaun’s Baked Muddy Road Cheesecake certainly was a hit in our house. Oh dear. Don’t you want to chomp on that slab right now? Goodness gracious, YUM!


INGREDIENTS
  • Bottom:
  • 2 cups graham cracker crumbs
  • ½ cup of melted butter
  • Cheesecake:
  • 2 packs of cream cheese
  • 2 eggs
  • 2 cups of icing sugar
  • 2 tablespoons of vanilla
  • Topping:
  • 1 cup of melted chocolate chips
  • 2 cups of mini marshmallows
INSTRUCTIONS
  1. The bottom layer is graham cracker crumbs and melted butter.
  2. We like a thicker bottom to our cheesecake.
  3. Insert song now “I like big butts and I cannot lie..”
  4. Mix the melted butter and the graham cracker crumbs together and pat in into your dish.
  5. The cheesecake itself is made up of 2 packs of cream cheese, 2 eggs, 2 cups of icing sugar and 2 tablespoons of vanilla. You got that?
  6. Mix it all up and pour it into your dish or spring form pan.
  7. We usually use a glass dish.
  8. We bake it at 350 degrees for 1 hour.
  9. Psss/ Shaun always places the cheesecake in a water bath.
  10. He fills a larger glass dish with water and places the glass dish the cheesecake is in down into it.
  11. Just thinking about this makes my belly rumble.
  12. The topping is made by melting chocolate chips in a dipper.
  13. Slow real slow.
  14. Turn your burner on 3 at the highest and stir those chocolate morsels like it is no ones business.
  15. As soon as they start to melt, take it off the burner and keep stirring.
  16. Add your mini marshmallows and coat them in the chocolate.
  17. Pour the chocolate and the mini marshmallows over your cheesecake and squirrel it away in the fridge to firm up.
