INGREDIENTS
- left-over potatoes
- left over chicken, bones removed
- crumbled bacon
- grated cheese
- 1 egg
- seasoned bread crumbs
- flour
- 1 egg, beaten with ¼ cup water
INSTRUCTIONS
- I had a lot of potatoes left over, so I used more of everything.
- Mash potatoes and add chicken (about a cup), 1 cup crumbled bacon, 1 cup grated cheese and 1 egg.
- Mix all together and shape into balls.
- Dip the balls into egg/water mix and then into flour/seasoned crumbs mix (1 cup of each)
- Use whichever oil you prefer. I used canola.
- Fry on med/high heat for 10 minutes or until browned all over.
