Mini meatloaf mountains are individual sized meatloaves for everyone. You get 2 scoops of mashed potato on top of your mini meatloaf with a spoonful of sauce poured over.
The Mini Meatloaf
1 1/2 cups of bread crumbs
1 teaspoon freeze dried onion flakes
1 teaspoons freeze dried garlic flakes
1 sprinkle of coarse pepper
4 tablespoons of ketchup
Mix all the ingredients together and stuff each greased pan with the meatloaf.
Bake for 40 minutes on 325.
Remove from oven and allow to set up for about 30 minutes.
Pour a mixture of equal parts water, ketchup, vinegar and brown sugar over the meatloaf.
Boil your potatoes and drain.
Add oregano, sprinkles of pepper, onion and garlic powder.
Use a mixer to blend everything together.
Scoop out the potato and place on top of the mini meatloaf.
I used 2 scoops for each meatloaf.
Place back into the oven on 325 and allow to brown.
Pour a little more sauce over the mini meatloaf mountains after they have been served.
