INGREDIENTS
- 1 bunch asparagus trimmed
- 2 eggs lightly beaten
- ½ cup flour
- ¾ cup panko breadcrumbs
- ¼ cup grated Parmesan
- salt and pepper
INSTRUCTIONS
- Dredge asparagus in flour, dip in the egg , and then in a mixture of the rest of the ingredients.
- Place on a wire rack on a tray and bake until lightly browned and crispy, 7-13 minutes.
