CRISPY FRIED ROAST CHICKEN BREASTS

Shaun had the day off today and you know darn well he was making chicken. I knew it would be deep fried and there was a good chance that he would incorporate roast chicken chips in anything he would make. I know him too well.
This chicken recipe was indeed crispy. Baking it for a few minutes drained the grease as well as gave it that crunch. Yum
INGREDIENTS
  • roast chicken chips – 1 cup
  • corn flake crumbs – ½ cup
  • bread crumbs – ½ cup
  • buttermilk pancake mix {‘just add water mix’}- ¾ cup
  • sprinkles of garlic powder, onion salt, pepper
  • add water to desired thickness – 1½ cups
INSTRUCTIONS
  1. Bake your chicken ahead of time.
  2. Mix all the ingredients together.
  3. Cover your chicken in the batter.
  4. Heat up your deep fryer.
  5. Pre- Heat your oven on 350.
  6. Put your chicken in and fry until it floats.
  7. Remove from the grease and place on a drip tray in the oven for 15 minutes.
