INGREDIENTS
- 4 peppers
- thinly sliced roast beef (I used deli roast beef)
- 4 slices cheddar cheese, halved
- chopped green onion
- 1 tbs. minced garlic
- 1 can of sliced mushrooms
- salt and pepper
INSTRUCTIONS
- I used about a tbs. of olive oil and butter, you may need a little more of each.
- Cut peppers in half length-ways, clean out the insides and remove the stem.
- Over med. heat saute butter, oil, garlic, green onions, mushrooms and salt and pepper.
- Add the roast beef and continue cooking for another few minutes.
- Fill the bottom of the halves with ½ slice cheddar cheese, and then spoon in the roast beef mix.
- Bake for 15-20 minutes on 350.
- Remove from oven and top with grated mozzarella cheese. Put back in and bake for another few minutes until cheese is bubbly.
