CRUNCHY CORN SALAD



Ingredients:
3 cups frozen corn (thawed) 1 cup chopped peppers 1/2 cup grated onion 1/2 - 1 cup mayonaise dash of salt and pepper
Mix together and just before serving add a handful of tri-colored tortilla strips and crispy fried onions (both available in the salad toppings department).
hint: throw in some grated cheese and/or a chopped apple
The salad was served today with Uncle Ben's Bistro rice (vegetable medley) and barbecued chicken. Delicious!
