INGREDIENTS
- red and white potatoes (peel on), scrubbed and cut
- red pearl onions
- a bag of baby carrots
- cauliflower
- broccoli
- mushrooms
- 1 pk onion soup mix
- 2 tbsp. olive oil
INSTRUCTIONS
- Combine all veggies in a large bowl.
- Sprinkle onion soup mix and olive oil over all and toss to coat.
- Put on a foil lined sheet and spray the top with butter flavored cooking spray, or melt butter and drizzle over the top.
- I covered them in tinfoil and baked.
- Bake at 300 for about an hour.
- Sprinkle a little salt over the top and enjoy!
