FARFALLE CHICKEN STIR FRY PASTA


I had a piece of left over chicken and was trying to decide what to make with it. Dad loves his bow ties and I had an extra bag in the cupboard so I knew I had to put it together for him. I also had a tomato I had cut for a sandwich for him for lunch so I decided I would use that too. We try not to waste food here. We use to throw out so much from freezer burn to letting things spoil. I’m not sure why we did it or let it happen. I’m on a very strict budget now and try and make the best of all the ingredients we have in our cupboards and fridge.

INGREDIENTS
  • farfalle pasta
  • chicken breast
  • red bell pepper
  • orange bell pepper
  • tomato
  • spaghetti sauce
  • Parmesan cheese
INSTRUCTIONS
  1. Boil your pasta as you would normally do.
  2. Brown your chicken in a frying pan with some cooking wine.
  3. Add the bell peppers and tomato.
  4. Cook for about 5 minutes.
  5. Add the tomato sauce and allow to simmer for another 6 minutes.
  6. Drain your pasta.
  7. Add your chicken and sauce on top and serve.
