ROTINI SIDE SALAD WITH SIZZLING BACON, TOMATO, CUCUMBER AND CHEDDAR CHEESE





It’s summer and we need side salads for our many BBQ’s. This rotini side salad was a hit with my boys. I chose the healthy version of the rotini. (No one could taste the difference except for the color) I boiled them as I normally would. I chopped cucumber, tomato and added a sprinkling of cheddar cheese.
I added the bacon last because it was hot and it helped to melt the cheese as I sprinkled it throughout the salad. You can use whatever salad dressing you like. A ranch would go great with this one or something even more simple with a touch of Italian.
