DELI ROAST BEEF AND RICE STUFFED PEPPERS


INGREDIENTS
  • deli style roast beef (finely chopped)
  • 1 cup diced tomatoes
  • 4 fresh mushrooms chopped (or 1 can)
  • 1 tbsp. minced garlic
  • 2 tbsp. onion flakes
  • 1 pack beef flavored rice
  • 1 can spaghetti sauce (I used primo)
  • peppers assorted
INSTRUCTIONS
  1. Cook rice according to directions on pack–set aside
  2. Cut the top off the peppers and clean out the inside.
  3. Cut up the pieces from the top.
  4. Heat 1 tbsp. oil in a skillet.
  5. Add garlic, small pieces of peppers, onion flakes, mushrooms and cook for a few minutes.
  6. Toss in the roast beef, 2 cups of the cooked rice and the tomatoes.
  7. Stir together and thoroughly heat.
  8. Fill the peppers with the mixture and pour a can of sauce over the top.
  9. Bake for 45-50 minutes at 300 degrees, or until the peppers are tender. Very tasty!
