I had these leftover baby potatoes from supper and needed to pull a quick meal together. I decided to make loaded baby potatoes and this is the result.

In mini individual baking dishes, I added the baby potatoes. I tossed in red onion, bell peppers and leftover chicken. I mixed up a little olive oil with pepper, onion and garlic powder and poured it over the potatoes. I sprinkled Mozzarella cheese over everything and popped it into the heated oven for 25 minutes. Done!
