INGREDIENTS
- chicken breasts 3-4 chopped
- 1 can pineapple chunks (drain and keep juice)
- 1 can chicken broth
- 1 green pepper chopped
- baby carrots and green beans
- Fry up chicken pieces in a small amount of oil.
- Add pineapple, pepper and broth.
- Simmer for 20 minutes and then add carrots and beans.
- Add the sauce and stir until thickened.
- sauce:
- juice from the pineapple
- 2 tsp. sugar
- 3 tsp. soy sauce
- ¼ cup vinegar
- 2 tbsp. corn starch
- mix all ingredients and stir until smooth
