Chicken and Veggie Kabobs


It is hard to feed my Dad these days. With all his medical issues the list of food he can eat is drastically smaller than the list of food he can eat by 80% or so. I try to come up with colorful food, interesting meals with poultry and vegetables he can eat. It is quite difficult to do. There are only so many things you can bake or make.
These chicken and veggie kabobs were perfect. Dad loved the different colors and he was quite excited to try them. He even had leftovers for lunch the next day which made it even better.
Each kabob had a piece of chicken breast, celery, bell pepper, red onion and mushroom. I made some without the chicken as well for my brother as he was eating a hamburger. The chicken kabobs were just for Dad. He scoffs at having to eat so much chicken but didn’t even grumble when these were set in front of him. I call that success.
These were thrown on the BBQ with a sprinkle of black coarse pepper and Onion Infused BBQ sauce which is our ultimate favorite.
