INGREDIENTS
- 4 peppers (I used a combo of colors)
- 2 boneless, skinless chicken breasts
- Cut chicken in thin slices and chop into small pieces.
- Put 3 tbsp. olive oil and 2 tbsp. butter in a frying pan, add chicken, salt, pepper, onion flakes, and 1 tbsp. crushed garlic.
INSTRUCTIONS
- Fry over medium heat until chicken is cooked and golden brown.
- To the pepper pieces add sliced cheddar cheese to cover the bottom.
- Spoon chicken mixture into the center and cover with mushroom slices.
- Bake for ½ hour at 350 and then add grated cheese to the top.
- Return to the oven until cheese is melted
