CHICKEN PEPPER WEDGES














INGREDIENTS
  • 4 peppers (I used a combo of colors)
  • 2 boneless, skinless chicken breasts
  • Cut chicken in thin slices and chop into small pieces.
  • Put 3 tbsp. olive oil and 2 tbsp. butter in a frying pan, add chicken, salt, pepper, onion flakes, and 1 tbsp. crushed garlic.
INSTRUCTIONS
  1. Fry over medium heat until chicken is cooked and golden brown.
  2. To the pepper pieces add sliced cheddar cheese to cover the bottom.
  3. Spoon chicken mixture into the center and cover with mushroom slices.
  4. Bake for ½ hour at 350 and then add grated cheese to the top.
  5. Return to the oven until cheese is melted
