INGREDIENTS
- 1 cup flour
- 1 tspn. onion powder
- 1 tspn. garlic powder
- 1 tspn. salt
- ½ tspn. pepper
- 1 cup grated Parmesan
- 1 cup bread crumbs
- 12 slices tomato
- 2 eggs
- 2 tbsp. honey mustard
- enough canola or olive oil to cover bottom of non-stick frying pan
INSTRUCTIONS
- combine first 5 ingredients in a bowl and mix
- combine bread crumbs (fine) and Parmesan in second bowl
- combine eggs and mustard in third bowl
- Dip the slices first in the flour mix, shaking off excess, then dip in egg mix, letting excess drip off and then dip in crumb mix pressing the tomato into the crumbs for good coverage on both sides.
- Heat the oil and over medium heat cook about 2 minutes on each side
- Serve hot and enjoy!!
