HOMEMADE MEATLOAF WITH MASHED POTATO AND TANGY SAUCE




I love meatloaf and mashed potato and this is probably one of my most requested meals. It is simple and can be made ahead of time if need be. I usually make the meatloaf ahead of time and make the mashed potatoes and the sauce on the day it is served.
The Meat Loaf
3 cups of ground beef
1/2 bread crumbs
fresh garlic
ground pepper
2 tablespoons brown sugar
4 tablespoons ketchup
2 tablespoons vinegar
Mix all the ingredients together and pat down into your baking dish. Bake at 325 for 45 minutes.
The Sauce
1/2 cup of vinegar
2/3 cup of water
1/2 cup of ketchup
6 tablespoons brown sugar
Mix all the ingredients for the sauce together. If you like a thicker sauce you can add a spoonful of flour or corn starch.

Add your mashed potato and 1 tablespoon of butter to the top of your meatloaf. Bake for 20 minutes on 350. Cut out a serving and pour the sauce over the top.
