This stir fry is too easy to make. I pick up a huge bag of vegetables and throw them into a wok with a little oil, salt, pepper and ginger. I turn the burner on 2 and shake the vegetables just like I would with those Jiff Pop popcorn. I close the lid and allow everything to steam very gently. Throw in the shrimp and continue to steam. Serve with a ginger sauce and white rice.
Ginger Sauce
3-4 tablespoons fresh grated ginger
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon corn starch
2 tablespoons sugar
1/2 cup water
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon corn starch
2 tablespoons sugar
1/2 cup water
Stir all the ingredients together. The ginger sauce will begin to thicken. Remove from the heat and pour over the stir fry.
