Shaun’s s’mores no bake cheesecake

We call the S’mores Cheesecake, the Some More Cheesecake because we all wanted more after we had our first bite. Yum, yum, yum. Shaun’s favorite dessert is cheesecake. He buys them and he makes them. Thankfully he made this one and we are forever grateful.
  • Bottom:
  • 1 cup of graham cracker crumbs
  • 4 tablespoons melted butter
  • 2 tablespoons sugar
  • Cheesecake:
  • 2 blocks of cream cheese
  • 1 cup icing sugar
  • 1 tablespoon vanilla
  • 1 cup heavy cream -whipped
  • Topping:
  • 1 cup of chocolate chips
  • 1 cup of marshmallows
  1. The bottom ingredients can get mixed together and patted down into your dish. Next mix your heavy cream.
  2. Once that has formed peaks, add your cream cheese, vanilla and icing sugar. When it has been mixed you can add it on top of the graham cracker bottom.
  3. I like to put the cheesecake into the fridge for about 30 minutes before I add the topping though.
  4. I like the cheesecake to be a little firmer and this certainly helps.
  5. Often we will top this cheesecake just before serving because I like my chocolate chips melty.
  6. You can use a mini blow torch to melt the marshmallows and the chocolate chips but we use a BBQ lighter.
