FRIED POTATO BALLS
left over chicken, bones removed
seasoned bread crumbs
1 egg, beaten with ¼ cup water
I had a lot of potatoes left over, so I used more of everything.
Mash potatoes and add chicken (about a cup), 1 cup crumbled bacon, 1 cup grated cheese and 1 egg.
Mix all together and shape into balls.
Dip the balls into egg/water mix and then into flour/seasoned crumbs mix (1 cup of each)
Use whichever oil you prefer. I used canola.
Fry on med/high heat for 10 minutes or until browned all over.
