  • left-over potatoes
  • left over chicken, bones removed
  • crumbled bacon
  • grated cheese
  • 1 egg
  • seasoned bread crumbs
  • flour
  • 1 egg, beaten with ¼ cup water
  1. I had a lot of potatoes left over, so I used more of everything.
  2. Mash potatoes and add chicken (about a cup), 1 cup crumbled bacon, 1 cup grated cheese and 1 egg.
  3. Mix all together and shape into balls.
  4. Dip the balls into egg/water mix and then into flour/seasoned crumbs mix (1 cup of each)
  5. Use whichever oil you prefer. I used canola.
  6. Fry on med/high heat for 10 minutes or until browned all over.
