A quick and very tasty lunch I made today with some leftover chicken. I put a little canola oil into a frying pan. I threw in about a cup of cooked chicken breast, 1 cup of mushrooms, halved, and a couple of strips of red pepper. Sprinkled salt, pepper, onion powder, and garlic powder on top and fried on medium heat for about 7 minutes. After it was ready, I just sprinkled grated Parmesan over the top.
