SPAGHETTI SQUASH STIR FRY



Note: This is my first experience with spaghetti squash (actually the first time I even saw one) so this is truly an original recipe.
I cut the squash in half and cleaned out the middle stuff and put the 2 halves face down in a microwave dish for 10 minutes. Then I shredded the "meat" with a fork.
In a skillet I put 2 tbsp olive oil and cooked 1/2 cup of each of mushrooms, onions, and green pepper for 5 minutes. Then I added the squash (about 2 cups), a bit of soya sauce and salt and pepper. I continued cooking for another 5 minute, and served with a little sweet and sour sauce.

I liked it..a lot.
