6 cups of beef broth 4 tbsp. minced garlic 4 cups chopped carrots 1 red pepper, chopped 2 zucchini, sliced 1 small cabbage, chopped 1 pk chopped broccoli 4 cups chopped kale 2 tsp. thyme 2 tbsp. parsley
I made a large pot of this soup, so I added an extra carton of beef broth and some water. Pour broth in a large pot and add garlic, carrots, red pepper, zucchini and cabbage. Cook for 30 minutes, then add the broccoli and kale and continue cooking for 10 minutes. Season with the thyme, parsley, salt and pepper.
