6 potatoes, cut in chunks 2-3 tbs. olive oil lemon pepper seasoning grated Parmesan cheese
I peeled and cut up the potatoes in small chunks. I put the oil in a bag and tossed the potatoes in and shook them until they were all coated in oil. Then I spread the potatoes out in a sprayed dish, liberally sprinkled with lemon pepper and baked for 40 minutes. I added some grated parmesan to the potatoes and put them back in the oven for 10 minutes.
I baked ribs in the oven with barbecue sauce and served with the roasted potatoes and a simple lettuce salad with light ranch dressing.
