3 boneless/skinless chicken breasts, cut in small pieces 1 cup flour 1/2 tsp black pepper 1 tsp salt 1 egg, beaten 1 can pineapple chunks (drain juice and save it for the sauce) 1 bag of frozen vegetables (I used Chinese style stir fry)
Dip the chicken pieces in the beaten egg, and then in the seasoned flour. Fry until golden brown. Arrange in bottom of casserole dish. Cover with the vegetables and pineapple chunks. Pour sweet and sour sauce over the top and bake 350 for 30 minutes.
1 1/2 cups sugar 1/2 cup water 1/2 cup pineapple juice 1/2 cup vinegar 6 tbs ketchup 2 tbs soya sauce 1/2 tsp salt 1/4 tsp pepper
Put all ingredients in a small pot. Mix well. Let come to a boil and then add 2 tbs. cornstarch which has been dissolved in 1/2 cup of water. Stir until thickened.
