MEAT LOAF CUPCAKES WITH MASHED POTATO ICING AND GRAVY DRIZZLE


INGREDIENTS
  • Ground beef
  • 2 eggs
  • Crushed crackers
  • Grated mixed cheese
  • Salt and pepper
  • Ketchup
  • A&W spice
  • Meatball/meatloaf spice from epicure
INSTRUCTIONS
  1. Mix all the ingredients together and put it in the cupcake pan.
  2. Bake for 350 for 40 minutes then another 10 minutes on 400.
  3. Boil your potatoes and mash with butter and milk until creamy.
  4. Add parsley…just a few pinches…
  5. Put the potatoes into a glad sandwich bag with the corner cut and make the swirl on top to make the icing.
  6. Drizzle with your gravy and serve to a happy hungry family.
