INGREDIENTS
- deli style roast beef (finely chopped)
- 1 cup diced tomatoes
- 4 fresh mushrooms chopped (or 1 can)
- 1 tbsp. minced garlic
- 2 tbsp. onion flakes
- 1 pack beef flavored rice
- 1 can spaghetti sauce (I used primo)
- peppers assorted
INSTRUCTIONS
- Cook rice according to directions on pack–set aside
- Cut the top off the peppers and clean out the inside.
- Cut up the pieces from the top.
- Heat 1 tbsp. oil in a skillet.
- Add garlic, small pieces of peppers, onion flakes, mushrooms and cook for a few minutes.
- Toss in the roast beef, 2 cups of the cooked rice and the tomatoes.
- Stir together and thoroughly heat.
- Fill the peppers with the mixture and pour a can of sauce over the top.
- Bake for 45-50 minutes at 300 degrees, or until the peppers are tender. Very tasty!
