ROAST BEEF PEPPER HALVES


INGREDIENTS
  • 4 peppers
  • thinly sliced roast beef (I used deli roast beef)
  • 4 slices cheddar cheese, halved
  • chopped green onion
  • 1 tbs. minced garlic
  • 1 can of sliced mushrooms
  • salt and pepper
INSTRUCTIONS
  1. I used about a tbs. of olive oil and butter, you may need a little more of each.
  2. Cut peppers in half length-ways, clean out the insides and remove the stem.
  3. Over med. heat saute butter, oil, garlic, green onions, mushrooms and salt and pepper.
  4. Add the roast beef and continue cooking for another few minutes.
  5. Fill the bottom of the halves with ½ slice cheddar cheese, and then spoon in the roast beef mix.
  6. Bake for 15-20 minutes on 350.
  7. Remove from oven and top with grated mozzarella cheese. Put back in and bake for another few minutes until cheese is bubbly.
  8. Delicious!
